I plan on renting a caravan and driving from carins to Mt. Isa.?
I want to make a circle through the country. Plan on driving from Carins to Normantown via Croydon then down to Cloncurry out to Mt. Isa for the rodeo. Then back to Townsville and up to Carins to catch a flight to Guam. I am used to driving some pretty remote country as I live in South Texas. Does anyone think I am biting off more than I can chew?

While your living in South Texas surely will help you understand the distances, realise that some of the Gas stations might be close to 300 miles apart with NOTHING in between.
Outback Australia kills people every year. Make sure your vehicle is appropriate to the trip, and that it is set up correctly. The site I've indicated has all sorts of helpful info about remote travel.
I don't want to scare you, but rather help. I think it will be a great trip for you and I love the area. Anytime from now thru to September would be best.
It will be a great experience, but not quite the trip of a lifetime. For that, across the top and down the West Australian coast takes some beating.
